Vegan Herb Butter Roasted Mushrooms and Chickpeas

Ingredients:
- 1 lb mushrooms, sliced
- 1 can chickpeas, drained and rinsed
- 3 tablespoons vegan butter, melted
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
Instructions:
Preheat the oven to 400F 200C
In a large bowl, combine the sliced mushrooms, chickpeas, melted vegan butter, olive oil, minced garlic, thyme, rosemary, parsley, salt, and pepper
Toss until everything is evenly coated
Spread the mushroom and chickpea mixture in a single layer on a baking sheet lined with parchment paper
Roast in the preheated oven for 20-25 minutes, or until the mushrooms are golden brown and the chickpeas are crispy, stirring halfway through
