Vegan Tomato Vodka Pasta
Indulge in a rich and creamy vegan tomato vodka sauce served over perfectly cooked pasta. This dish is bursting with flavor and sure to satisfy your pasta cravings.
Ingredients:
- 1 tbsp olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1/2 cup vodka
- 1 can 28 oz crushed tomatoes
- 1/2 cup coconut cream
- Salt and pepper to taste
- Fresh basil leaves, for garnish
- 12 oz pasta of choice such as spaghetti or penne
Instructions:
Heat olive oil in a large skillet over medium heat
Add diced onion and minced garlic, saut until softened, about 5 minutes
Carefully add vodka to the skillet and let it cook for 2-3 minutes, allowing the alcohol to evaporate
Stir in crushed tomatoes and coconut cream, bring to a simmer
Season with salt and pepper to taste, then reduce heat and let the sauce simmer for 15-20 minutes, stirring occasionally
While the sauce simmers, cook pasta according to package instructions until al dente
Drain and set aside
Once the sauce has thickened and flavors have melded, remove from heat
Serve the sauce over cooked pasta, garnished with fresh basil leaves
