Soft Pumpkin Sugar Cookies with Cinnamon Frosting
Ingredients:
- 1 cup pumpkin puree
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- Cinnamon Frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 2-3 tablespoons milk
Instructions:
In a large mixing bowl, cream together the pumpkin puree, granulated sugar, and softened butter
Add the egg and vanilla extract to the mixture and mix until well combined
In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, nutmeg, ginger, and cloves
Gradually add the dry ingredients to the wet ingredients, mixing until a soft cookie dough forms
Cover the cookie dough with plastic wrap and refrigerate for at least 1 hour
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
Take out the chilled cookie dough and roll it into 1-inch balls
Place the cookie balls on the prepared baking sheet and flatten them slightly with the back of a spoon
Bake the cookies in the preheated oven for 10-12 minutes or until the edges are set and lightly golden
While the cookies are baking, prepare the cinnamon frosting by beating together the softened butter, powdered sugar, ground cinnamon, vanilla extract, and milk until smooth and creamy
Once the cookies are done baking, let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once the cookies have cooled, spread a generous amount of cinnamon frosting on top of each cookie
