Crispy Oatmeal Chocolate Chip Cookies
Ingredients:
- 1 cup rolled oats
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a bowl, mix together the rolled oats, flour, baking soda, and salt
In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined
Stir in the chocolate chips
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart
Flatten each dough portion slightly with the back of a spoon
Bake in the preheated oven for about 10-12 minutes or until the cookies are golden brown around the edges
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
